Here’s a delicious recipe for organic stewed apples that is the perfect dish for this time of year!
Why is it perfect you ask? As the seasons change, so should our food preferences. As the weather cools, our bodies crave warmer foods like soups, broths, and other hearty comfort foods. It’s just the way we’re wired.
In addition, eating seasonally is healthier and supports local farmers. For example, when you buy apples in the spring, they are likely picked early and shipped from South America. The nutritional value suffers and takes business away from your local economy.
Warm apples provide a nice change from cooler summer fruits like melons, and citrus which are out of season anyway. In addition to being a delicious warm treat, gently cooking apples helps aid digestion and absorption of the apples’ nutrients.
Apples also happen to be a digestive igniter. Since your digestion is in rest mode overnight, eating warm apples in your first meal is a great way to gently awaken your digestion in the morning.
The spices in my organic stewed apples have other health benefits: cinnamon absorbs nutrients and improves digestion; cardamom activates secretion of digestive enzymes; and ginger stimulates and aids in digestion.
Ingredients
2 apples, cored, cut into bite-sized chunks (organic)
¼ cup raisins
¼ cup goji berries (optional)
2-3 prunes chopped (optional)
½ cup chopped walnuts
1-2 teaspoons of cinnamon (to taste)
½ tsp cardamom (optional)
½ tsp ginger
¼ tsp cloves (optional)
Water to just barely cover the apples in the pot
Directions
- In a small saucepan mix all the spices with the apples and other fruit and water in the pot.
- Simmer on low 15-20 mins , until tender.
- Transfer to a bowl, let them cool down a bit and then dig in!
As a healthier option soak the Goji berries, prunes and raisins overnight for maximum digestive absorption.
